A cupcake being topped with cream

A step-by-step guide to creating the perfect cupcake.

Time is precious, so to avoid your cakes coming out the oven looking like puffballs and to make sure you have the right number and sizes of bowls, leave enough time to read the recipe in full before you get started.

If you want your cupcakes to come out of the oven with a surface as smooth as Halle Berry’s face, use an ice cream scoop to measure the batter and never fill the case more than 3/4.

Does it ever annoy you when people tell you that ‘patience is a virtue’? Well, we hate to tell you that it’s true. Once your cakes are in the oven, set a timer and leave them well alone until it beeps. Opening the oven door causes the temperature to change and your poor cakes will suffer as a result.

If you need to decorate your cake, make sure to let it cool completely before hand. If you’re impatient, it’s not so bad, it gives you a chance to do your hair, or slip on your best frock.

If you want to keep your cakes fresher for longer, place them in a cake tin. Don’t seal them in an airtight container, as this will make them sweaty. And no one likes sweaty do they?
